Amazon.com Review Measuring 16 inches across, this cover for Calphalon's paella pan keeps heat and moisture in when making traditional paella dishes, such as rice with chicken or seafood. (A paella pan is kind of like a wok, but shallower.) Its nonporous and nonreactive hard-anodized surface resists sticking and doesn't affect the flavor or color of food--it's also tough enough to handle nonsharp stainless-steel utensils. The chromed cast-iron handle may get warm though, so keep a hot pad handy. Remember to hand wash all Calphalon pans, as dishwasher detergents are bad for the finish, and their use voids the lifetime warranty. --Dale Steinke
